Add Today Task Widget
So you can pick a widget for each weekday, which is interesting, but you can't have the same idea for "Today". Seems like an oversight? The "Today" tasks widget seems most appropriate. Perhaps the standard Task widget is supposed to do that, but it currently doesn't. Not really sure the logic there, but that is covered in other feedback.

Yes, those widgets are available, but thats an inefficient way to go about things. Preferably an additional "Today" widget would always show tasks due/assigned to Today (as well as overdue)! So as the calendar day changes, the tasks shown there will keep anything overdue but add the new calendar day to it. The same way the standard Today task query works.
Currently, you would need 7 widgets (one for each weekday) to be sure you always have the current day. I've never seen a task manager app have a widget for a specific weekday that isn't today. Normally, you'd have various options that all include today: today, next/upcoming (usually includes today as well), this week, etc.
